Jonathan Brown brings his experience at some of the most
prestigious fine dining establishments in the Western United
States, to 1515 Restaurant in Denver.
He culinary career circled Denver, commencing as Chef
D’Cuisine at French 250 in Denver where he is directly
involved in creating classic French sauces and stocks and
overseeing the perfect execution of all dishes, and
culminating at the Brown Palace Hotel (a four-star
restaurant).
In between, Jonathan experimented with the cuisine at
numerous popular destination restaurants in Las Vegas
including Spago, David Bourke, Joel Rouboucon, and Emeril
Lagasse. Brown also created nightly wine tasting menus, and
oversaw large teams of 25-30 chefs at Alize and Mercato.
Jonathan’s awards and achievements in the culinary industry
include: 2007 Gold Beaujoius Wine Tasting; 2008, Best up and
Coming Restaurant in Portland, and the 2004 Gold Art
Institute Plate Presentation.
Jonathan now looks forward to his partnership with Executive
Chef Chuck James at 1515 Restaurant, creating more
award-winning cuisine and blending wine pairings with
creative dishes for a unique and truly inspirational fine
dining experience in Denver.
